Malt is made from barley or cereal grains that have been dried out through a specific term called malting. Malt extract is just an extract of the malt itself. Malt extracts are typically a liquid or dry sweetener and can be found in many different varieties.

These types of malt extracts include special and black malt extracts, typical malt extracts and co-extracts of malt and other cereal grains. Special malted combinations are used for a variety of other substances such as supplements, food, other specialty powders, or different types of alcoholic beverages. Malted grains are used to make and ferment beer.

When the actual malted grains are mixed with water, it breaks down the components of the mixture, creating the malted seed and sweet liquid. Together these two components combined into the sweet liquid that is either dried out for sweetener or kept in liquid form.

Varieties of Malt Extract  

The three varieties of malt extract are used for different reasons. The typical malt extract, for example, is the most simple malt extract that there is.

This type of malt extract is the original starch and sweetener that the other varieties were derived from. Originally this type of malt extract was made with corn syrup and cereal grains in order for bakers to have a better combination for their recipes.

The second type of malt extract is the special or black malt extracts. These extracts are used primarily for the variety of beer that is produced using these extracts. This malt extract is also used in food coloring and yeast products that are generally used while baking.

The last type of malt extract is cereal grain and co-extract malt. This malt extract is used directly from the grains or starch itself and then extracted to create a malted barley combination. This malted barley extract is a cheaper source of starch.

Food Products Made With Malt Extract

There are many food products that can be produced with malt extract.  While malt extract is familiar for producing specialty grains and natural sweeteners, it is also used to create pretzels, bagels, baby food, candy, soy milk, waffles, pancakes, crackers, and baby food. Malt can even be used in pizza dough!

Malt Extract as a Nutritional Supplement

Malt extracts are not only used in food or for beer, but they are also used as nutritional supplements for people who are not getting their recommended daily allowance of vitamins. Malt extract can also be used as a dietary supplement, much like the combinations of B12 and B6 vitamins, diet smoothies and vitamin C drinks that are often used as meal replacements.

Children in England who were part of the working class often dealt with vitamin deficiency. The malt extracts were also combined with cod liver oil in order to make the perfect remedy for the lack of nutritional value in the children’s diets. This type of extract has a history of use in that country as not only a vitamin and nutrient boost, but also as a dietary supplement.

Malt extract is also used in America as a dietary supplement, most often for children and senior citizens. The FDA has recognized malt extract as a GRAS (Generally Recognized As Safe) ingredient since 1982, so you can feel safe using it! Be sure to look for products that are manufactured in the United States, since the companies have to comply with FDA regulations and Good Manufacturing Practices.

The Malt Product Corporation states that athletes can actually benefit from taking malt extract.  Malt extract was found to improve both sugar and lactic acid blood levels of athletes after exercise.
